Weird Birds Recipes: Leftover Rice Pudding

This week we made some basmati rice to go with our lamb korma, and ended up with a bunch of leftovers.  Recalling the delicious arroz con leche we devoured daily in Costa Rica, I made some rice pudding with it.  Try it the next time you have leftover rice!

Leftover Rice Pudding

2 cups leftover rice
2.5 cups milk (I used skim and it was delicious)
2 cinnamon sticks
1/3 cup sugar
1/2 tsp vanilla
pinch of salt

Put rice, milk, sugar, vanilla and salt in a saucepan, heat until boiling, then bring to a simmer.  Add the cinnamon sticks.  Stir often and let it simmer until the milk is soaked up (30ish minutes).  Serve warm or chilled, with a little extra cinnamon sprinkled on top.  Try adding raisins if you want!

  1. YUM. ohman, i loooove rice pudding…i could probably eat it all the time, in different incarnations (like the ones at that NYC ride pudding shop), for the rest of my life. i’m totally stealing this recipe! 🙂
